Asian Crunch Salad

I was craving something crunchy and fresh tasting and only had a few veggies in the fridge. This came together quickly and relatively easily! We had barbecued chicken thighs on the side and it was the perfect weeknight dinner! I even had the leftovers for myself the next day!

 

Ingredients:

Salad:

1 cup chopped red cabbage

1 cup edamame beans

1 cup chopped cucumber

1/3 cup sliced red onion

3 green onions sliced

Sesame seeds

Dressing:

1/4 cup Olive Oil

1/4 Rice Vinegar

1.5 Tbsp Honey

3 Tbsp  Sesame Oil

1.5 tsp Soy Sauce

2 minced garlic cloves

Salt + Pepper to taste.

 

Directions:

Chop up all your veggies as desired. For dressing mix it all in a container or mason jar and shake to combine. Pour over veggies and stir to combine. Top with sesame seeds and extra green onion for garnish if you so desire!
