Cactus Teriyaki Chicken Bowl Dupe

I have tried to recreate this recipe FOR YEARS, and they have always been good but not quite 100% bang on. THIS recipe is the closest I've come to perfection! The 2 keys are THICK Teriyaki sauce and the Spicy Yogurt Sauce.

Ingredients:

  • Chicken Breasts
  • Rice
  • Brocoli
  • Red Cabbage
  • Onion
  • Mushrooms
  • Green Onion
  • Red Pepper
  • Thick Teriyaki Sauce
  • Plain Greek Yogurt
  • Mayonaise
  • Sriracha
  • Powdered Ranch

Here's how my bowl came together:

I cooked the chicken breast earlier then sliced it up to add to my vegetable stir fry. The key veggies I included were small broccoli florets, red pepper, onion + mushroom but you could really stir fry whatever you like best (or have on hand). Also key is the red cabbage but I don't stir fry this because it makes everything purple! I just steam fried mine on the side in a little frying pan.

I got the rice cooking and chopped up the veggies. Once it's all chopped I threw the broccoli, mushrooms and onion into the stir fry pan to cook. When the veggies were close to done I added the red pepper and chicken and poured in the thick teriyaki sauce. Let that all come together while the rice finishes. Steam fry the red cabbage in a frying pan on the side, just until soft.

Then I made the key ingredient... the Yogurt Sauce. I'm horrible with keeping track of measurements so bare with me. In a small bowl I added about 1/2 cup of greek yogurt, maybe a tablespoon or less of mayo and a couple squeezes of sriracha and mixed. Then I added the ranch dressing powder bit by bit until it came to a taste I liked. If I had to guess I'd say a tsp or so. Mix that all up!

To put the bowls together start with the scoop of rice and cover with the Teriyaki vegetables + chicken. Scoop a couple dollops of the yogurt sauce on top and then add the warm red cabbage mix on top. Sprinkle with the chopped green onions and voila!
