Deconstructed Lettuce Wraps

This bowl recipe is the answer!
INGREDIENTS:
  • Shrimp or Prawns
  • Slivered, chopped carrots
  • Chopped red pepper
  • Bean sprouts (optional)
  • Cilantro for topping (optional)
  • Green Onion for topping (optional)
  • Chopped peanuts for topping (optional)
  • Lettuce
  • Rice of your choice
  • Olive Oil, S+P
  • Sesame Seeds (topping)

SAUCE:

  • 1/4 cup smooth peanut butter
  • 1 tsp grated ginger
  • 2-3 cloves grated garlic
  • 1 tbsp sriracha
  • 1 tbsp soy sauce
  • 1 tsp toasted sesame oil
  • 1-2 tbsp water or as needed to get desired consistency.

 

DIRECTIONS:

Start by making the sauce. Mix or blend all ingredients up ahead of time. A hand blender will be your friend for blending. I have a frother but it gets gunked up with the peanut butter so prefer to use this semi-auto hand blender and it's great! Add water until you get desired consistency. Then get rice cooking. While rice cooks, chop peppers and carrots and any other veggies you are including. Chop shrimp or prawns if desired. Once rice is almost done, add a plash of oil to a pan and add prawns. Cook for 2-3 minutes and then add veggies. Only cook for another couple of minutes so they are wam but still crisp. Season with salt and pepper as desired (We added Mike's Hot Honey) to the shrimp and veggies to add a little extra sticky/sweet heat!

Then serve into bowls! Add lettuce, rice and top with cooked shrimp and veggies. Top with homemade peanut sauce and toppings of your choice! YUM! Omit the rice if you are looking for a lighter version! Would also be delish with cucumber and avocado!
