It's the best thing since sliced bread... literally! We were at Red Bird Brewing one night and they had a dill pickle pizza on the menu. I'd been dying to try this dill pickle on a pizza thing so we ordered one up! It. Was. Amazing!!
We brought some home for the kids and they loved it too so obviously we decided we had to try to recreate it using our Ooni Pizza Oven at home!
Mr Blue Sky whipped up a batch of his famous Wolfgang Puck pizza dough and we were off to the races. Here's what we used to create our new favourite masterpiece!
For the base I made a creamy Garlic Sauce.
2-3 large cloves finely chopped or grated garlic
3/4 cup plain Greek Yogurt (sour cream would work too)
1/4 cup Mayo
1-2 tsps water
1 tsp lemon juice
1/2 tsp sea salt
1/4 tsp pepper
Other Ingredients you'll need:
Pizza Dough
Pickles
Mozzarella
Fresh Dill
Bacon pieces
Parmesan Flakes
We topped the fresh pizza dough with the cream sauce, added thinly sliced garlic dill pickles (which we dried out a bit first so the pizza wouldn't get soggy), topped it with mozzarella cheese, bacon pieces and parmesan flakes... then popped it into the Ooni for 2-3 minutes. I topped ours with a Dill Pickle Aoli just before serving.
Dill Pickle Aoli
1 tbsp chopped fresh dill
1 tbsp dill pickle juice
1/4 cup Mayo
