I had never even tried ramen before and for some reason I was craving it. It always looked so fresh and delicious. I was determined to find an easy at home version to throw together and this is what I came up with!
Ingredients:
Vegetable or Chicken Broth
Ramen Noodles of your choice
Cooked, Sliced Chicken
Baby Bok Choy
Hard Boiled Eggs
Shitake Mushrooms
Julienned carrots
Sliced Green onion
Lightly Toasted Panko (optional)
Sesame Seeds (optional)
Directions:
I started by slicing and sautéing the mushrooms. While doing this I brought a small pot of water to boil and once boiling popped in my eggs to hard boil with soft yolks (add cold eggs to boiling water, cover and boil for approx 7 minutes then place in ice bath).
I then sautéed the sliced baby bok choy and put the bok choy and mushrooms off to the side until I filled the bowls for serving.
Next, slice/julienne your carrots and toss them in a pot with a little garlic until slightly softened. Add your already cooked, sliced chicken to warm up. Then add broth of your choice and simmer. I chose to cook the noodles in a separate pot but you could add them here to cook in the broth as well.
Then it just comes to plating (bowling if you will). I placed my cooked noodles in a bowl, topped with a couple scoops of the broth, chicken and carrots then filled to make it look pretty with the seared bok choy, mushrooms, half of a hardboiled egg (peeled obvs). I topped ours with a little hot sauce, sliced green onions, a sprinkle of toasted panko and black sesame seeds. In all honestly I'd skip the panko... it gets soggy too fast.
