Creamy Roasted Garlic Mashed Potatoes
2 entire heads of roasted garlic (to roast slice off top 1/3 and drizzle with olive oil. Wrap in tin foil and roast at 400 for 35-45 minutes)
1 tbsp sea salt
5 lbs russet or yukon potatoes, peel and boiled
1 cup sour cream
1/2 cup butter
5 oz cream cheese (or to taste)
Additional salt & pepper to taste.
Boil potatoes until soft, add in all ingredients except garlic and place lid back on. Let it sit 5 minutes for cheese to warm and soften. Then mash potatoes, squeeze roasted garlic out and add and continue mashing until desired consistency is reached. Can make this ahead and warm up to serve as well!
