Pantry Style Turkey Taco "Stoup"

This is the perfect meal if you are running low on fresh veggies, but still want something healthy and hearty!
I used a package of ground turkey and a bunch of canned products from my pantry! I threw in some onion and green pepper from my fridge as well, but you could sub for celery or carrots or anything you have available. 
INGREDIENTS:
  • 1 pkg ground turkey
  • 1 pkg taco seasoning
  • 1 white onions (or whatever you have)
  • 1 green pepper
  • 1 can corn
  • 1 can kidney beans
  • 1 can black beans (just use whatever beans you have!)
  • 1 796 ml can crushed tomatoes 
  • 1 900 ml box chicken stock
  • S+P to taste
  • 1 tsp onion powder

TOPPINGS OPTIONS:

  • Avocado
  • Shredded Cheese
  • Green Onion
  • Corn Chips
  • Cilantro
  • Jalapeno

DIRECTIONS:

Brown turkey in soup pot. Once browned, add onion and any other fresh veggies you have. Cook for 5 mins. Add package of taco seasoning and stir. Then add canned items: crushed tomatoes, corn, beans, and any additional seasoning then mix. Next add 1 carton of chicken or vegetable stock and bring to boil. Let simmer for as long as you like. It's a great meal to make ahead! Turns out nice and thick... not quite like a chilli or stew but much more substance than a typical broth soup.

Add toppings of your choice. We topped our with those delectable Costco corn chips, cheese and avocado. And of course we enjoyed some fresh baked sourdough bread on the side!
