Turn those Tomatoes into a Delicious Sauce

Is your garden over flowing with ripe or overripe tomatoes?
We make this tomato sauce every time we have a batch of tomatoes ready to go and if it's too summery to eat a hot sauce, we just freeze it and use it during the colder winter months! Makes the perfect tomato sauce for bolognaise or chilli! It's a great way to make use of those delicious garden tomatoes and any other over rip veggies lingering in your crisper! There is hardly even a recipe to share here, but I will share what I do and what I use! 
Heat oven to 400 degrees. Slice tomatoes, onion and any other veggies you'd like to add and layer onto parchment paper on a cookie sheet. I add as many garlic cloves as I feel like (you measure that shit with your heart 😉 ). Sprinkle with extra virgin olive oil, salt, pepper and Italian seasoning and roast for 45ish minutes.
Once everything is roasty and perfect just scoop into your blender and blend. I always add lots of parmesan cheese because we love cheese! Add more salt and pepper to taste and there you go. Sweet, roasted tomato goodness!
I add ground turkey to mine and my kids gobbled it all up!
