Mmmm fall feels and all the pumpkin spice! I love making muffins for my kids for school lunches or quick snacks between school and dance. HOWEVER, they need to be enticed to eat them by some sort of chocolate chip. The white chocolate in these ones is a yummy addition and worked just as I had hoped!
Ingredients:
1 3/4 cup flour
1 cup brown sugar
1 tsp baking powder
1 Tbsp cinnamon
1 tsp pumpkin pie spice
1/2 tsp baking soda
1/2 tsp salt
2 eggs
1 3/4 cup pumpkin puree
1/2 cup vegetable oil
1 Tbsp milk
1 tsp vanilla
1 cup white chocolate chips (save some for topping)
1 cup brown sugar
1 tsp baking powder

1 tsp pumpkin pie spice
1/2 tsp baking soda
1/2 tsp salt

1 3/4 cup pumpkin puree
1/2 cup vegetable oil
1 Tbsp milk
1 tsp vanilla
1 cup white chocolate chips (save some for topping)
Directions:
Heat oven to 375 degrees. Mix dry ingredients in a large bowl. Mix wet ingredients in smaller bowl, then add MOST of the cup of white chocolate chips. Add wet ingredients to dry and stir to combine.
Spray or line muffin tray with liners and fill 3/4 full with pumpkin muffin mix. Top with a few additional white chocolate chips and bake for 20-25 minutes until tops spring back and toothpick comes out clean.
