A delicious Cactus Club dupe!
My fave is to make this with purple cabbage (not shown), sautéed mushrooms, broccoli and load it with whatever fresh vegetables I have on hand! If I'm feeling carb conscious I'll skip the rice and add extra cabbage in it's place!
The key to this recipe is using thick teriyaki sauce, greek yogurt and sriracha... mmmm!
Ingredients
1-1.5 Cups of rice
2-3 Chicken Breasts
Avocado
Peppers
Broccoli
Purple Cabbage
Red Onion
Green Onion
Sautéed Mushrooms
(I use whatever combo of these veggies I have on hand)
Green Yogurt
Thick Teriyaki Sauce
Sriracha
Directions
Cook rice according to instructions.
Bake chicken breasts or chop and stir fry in Teriyaki Sauce.
Sauté mushrooms & broccoli if using and add Teriyaki Sauce at the end.
Steam purple cabbage and add Teriyaki Sauce at the end.
Assemble bowls with cooked rice, add a dollop of greek yogurt and top with sriracha. Then add sautéed cabbage, mushrooms, chicken and top with remaining raw veggies. For those that like it saucy feel free to add more Teriyaki as desired. I like to top with green onion and black sesame seeds.
